Why am I making this?
Soaked, peeled almonds (vatama) bring vitamin E, protein and good fats long valued for the mind, and blended smooth into cardamom milk they're absorbable and safe, sweetened only with a date. Soaking overnight and slipping off the skins is the chef's step that makes the almonds gentle on a little tummy and the milk silky. A classic badam doodh, done right.

How to make it
What you'll need
- 8–10 almonds, soaked overnight and peeled
- 1 cup milk
- A pinch of cardamom and 1 soft date
- Soak the almonds overnight, then slip off the skins — this makes them gentler and better absorbed.
- Blend the peeled almonds smooth with the milk and date.
- Warm gently and add a pinch of cardamom.
- Serve warm.
