How to make it

Dried apricots (khubani) are little jewels of concentrated sweetness, iron and energy — and blended with ground cashews and milk they make a glowing, honey-coloured milkshake that's rich, fruity and deeply nourishing. A lovely change from the usual flavours.

What you'll need

  • 3 soft dried apricots (khubani), soaked until plump
  • 5–6 cashews, soaked and finely ground
  • ¾ cup whole milk
  • A pinch of cardamom

How to make it

  1. Soak the dried apricots until soft and plump; soak and grind the cashews smooth.
  2. Blend the apricots, cashew paste, milk and cardamom until thick and creamy.
  3. Serve fresh, mid-morning, between meals.

Use soft, unsulphured apricots if you can, and grind the cashews very fine for little ones.
