Why am I making this?

Colour is a baby's first invitation — a vivid pink bowl makes a curious little one lean in, which is exactly the awakening of appetite the classical texts call ruchi. Beetroot's earthy sweetness is rounded out by apple's gentle madhura sweetness, and together they bring folate and fibre. Steamed and mashed smooth, it's a pretty, easy yes; offered again and again (abhyasa), bright vegetables become familiar. Beetroot and apple came to Indian kitchens later, so we place them within the sweet-taste and habituation (satmya) principle rather than a cited verse.

How to make it

What you'll need

  • 2 tbsp boiled, peeled beetroot
  • 1/2 apple, peeled and steamed soft
  • A tiny pinch of cinnamon (optional)
  1. Boil the beetroot and steam the apple until both are very soft.
  2. Mash together to a smooth, bright pink bowl.
  3. Add a tiny pinch of cinnamon if you like.
  4. Cool to lukewarm and serve.
