Why am I making this?

Beetroot's folate supports the developing brain and nervous system, and its natural sweetness (madhura) makes it one of the easiest vegetables to win a toddler over with. Paneer adds protein for steady growth, and ghee carries it all. The deep pink colour does real work too: children eat first with their eyes, and a bowl this colour invites curiosity (ruchi). Beetroot came to Indian kitchens later, so we place it within the satmya principle of suitable, nourishing food.

How to make it

What you'll need

  • 4 tbsp soft cooked rice
  • 2 tbsp boiled, peeled beetroot, mashed or finely grated
  • 2 tbsp paneer, grated
  • 1 tsp ghee, a pinch of cumin and a bay leaf
  1. Temper cumin and bay in ghee.
  2. Add the grated beetroot and cook a couple of minutes until soft and sweet.
  3. Fold in the rice and paneer with a little water; warm through to a soft pink pulao.
  4. Cool to lukewarm and serve.
