Fruit shrikhand cups — a creamy hung-curd dessert that builds bones like a treat (2–5 years)
Thick, creamy hung-curd shrikhand folded with soft fruit and saffron — a dessert-feeling bowl that's really a calcium delivery.
Why am I making this?
Hung curd (shrikhand from dadhi) concentrates the calcium and protein of curd into a thick, dessert-like cup, and soft fruit with saffron and cardamom makes it a treat (ruchi) sweetened by a date, not sugar. Hanging the curd to thicken is the chef's step that turns an everyday food into something that feels special. A beloved classical milk preparation doing real bone work.
Ancient text
