Why am I making this?

Paneer (ksheera) brings calcium and protein for bones and muscle, folded through a soft uttapam with grated vegetables for colour and fibre; keeping the uttapam small, thick and soft is the chef's step for little hands and gums. Paneer and the fermented rice-urad (masha) batter are classical; the vegetables sit within the satmya principle.

How to make it

What you'll need

  • 1/2 cup soft dosa/idli batter (or fermented rice-urad batter)
  • 1/3 cup grated paneer and finely chopped carrot and peas
  • A little ghee, mild seasoning
  1. Stir the grated paneer and soft vegetables into the batter.
  2. Pour small thick uttapam onto a warm tawa with a little ghee.
  3. Cook soft on both sides until just set.
  4. Serve warm and soft.
