Why am I making this?
A little ghee turns simple semolina and milk into a rich, calorie-dense comfort drink. The classical texts hold ghrita (घृत, ghee) as the foremost of wholesome fats — nourishing, strengthening and kindling for a sluggish appetite — and roasting grain in ghee makes it fragrant and easy to take. Cooked silky with milk and lightly sweetened, it becomes a soothing, building sip. Offered mid-morning between meals, the ghee and milk add concentrated energy that helps a slow-to-gain toddler along.

Modern research
Adding ghee and whole milk to semolina meaningfully raises the energy density of a small serving — an effective, well-tolerated way to add calories for toddlers who need to gain.

How to make it
This is a thin, drinkable version of the classic ghee-roasted rava sheera — warm semolina cooked in a little ghee and milk until silky, then loosened into a sippable, comforting drink. Ghee makes it rich and calorie-dense; toddlers find it soothing and moreish.
What you'll need
- 1 tbsp fine semolina (rava/sooji)
- ½ tsp ghee
- ¾ cup whole milk
- ½ tsp jaggery, to taste, and a pinch of cardamom
How to make it
- Roast the rava in the ghee on low until fragrant and pale golden.
- Add the milk slowly, stirring, and cook to a smooth, silky, pourable consistency; sweeten lightly with jaggery and cardamom.
- Cool to warm and serve as a sippable drink, mid-morning.
Keep it pourable and lump-free — a thin, drinkable sheera rather than a thick halwa.

A few honest notes
- Cook smooth and lump-free; keep ghee to about half a teaspoon; serve warm, never hot, with supervision.
- Use whole cow's milk from one year; ensure dairy and wheat/semolina are tolerated; jaggery only from one year.
- Keep it between meals so it adds to, not replaces, solids.

Storage & make-ahead
Best fresh and warm — it thickens as it sits, so loosen with a splash of warm milk when reheating. Keep refrigerated for up to a day and rewarm once, re-testing the temperature before serving.
