Why am I making this?
A warm milk-and-semolina porridge gives calcium, slow carbs and tryptophan to support settling, banana adds magnesium and natural sweetness (madhura), and a whisper of nutmeg (jaiphal) is a classical calming aromatic — a tiny grate only. How to make it
What you'll need
- 2 tbsp semolina (sooji)
- 1 cup milk
- 1/2 ripe banana, mashed, a pinch of cardamom, the tiniest grate of nutmeg
- Roast the sooji lightly in a touch of ghee until fragrant.
- Cook it in the milk, stirring, to a soft porridge.
- Fold in the mashed banana, cardamom and a tiny grate of nutmeg.
- Serve warm.
