Soft vegetable pulao with ghee — a fragrant, calorie-rich lunch for healthy weight gain (1–2 years)
A fragrant, ghee-rich pulao soft enough for little ones — wholesome calories that smell like a feast.
Why am I making this?
Aroma matters to a child's appetite, and a gently spiced pulao smells inviting enough to draw a reluctant eater to the plate. Made soft and enriched with ghee — and a little curd or paneer — it packs wholesome calories and protein into a portion a toddler happily finishes. A fragrant, comforting lunch that supports gentle weight gain without feeling like a chore.
Ancient text
Rice prepared with ghee and gentle spices is nourishing and pleasing to eat.
The classical scriptures describe rice cooked with ghee and warming spices as nourishing and appetising — the thinking behind a fragrant, ghee-enriched pulao for a child who needs to eat well.

Modern research
Rice provides easily digested energy, vegetables add vitamins, and energy-dense ghee raises the meal's calories without raising its volume — the recommended approach for healthy weight gain; adding curd or paneer further boosts protein and calcium.

How to make it
What you'll need
- 3 tbsp rice

- 1.5 tsp ghee
- A pinch of cumin, a small piece of cinnamon and one clove (removed before serving)
- 1 tbsp curd or a little paneer (optional, extra richness)
- In the ghee, gently sauté the cumin, cinnamon and clove, then the chopped vegetables for 2 minutes.
- Add the rinsed rice and 1 cup water, and cook until soft and fluffy (pressure-cook 3 whistles or cook covered).
- Remove the whole spices. Mash lightly to your toddler's texture and stir in a little curd or grated paneer if using.
- Cool to warm and serve with an extra drizzle of ghee.

A few honest notes
- Always remove whole spices (cinnamon, clove) before serving to a young child.
- Keep it mild — no chilli; keep salt modest for under-2s.
- Introduce new vegetables one at a time, with a 3-day gap.
- If your child is persistently not gaining weight, see your paediatrician.
Storage & make-ahead
Best served fresh and warm. Keeps covered in the fridge for a day; warm gently with a sprinkle of water and add fresh ghee at serving. Travels reasonably for tiffin within a few hours.
