Why am I making this?
Walnut (akshota) brings omega-3 for the brain and spinach adds leafy iron and folate, stirred into a soft moong khichdi that's a complete, gentle one-pot; the walnut is ground fine and added at the end so it stays nutty and safe. That late-added ground walnut is the chef's step. Walnut, spinach and moong are classical.

How to make it
What you'll need
- 1/4 cup moong dal and 1/4 cup rice
- A handful of chopped spinach
- 1 tbsp walnut, ground fine, ghee, cumin
- Cook the moong dal and rice soft with the spinach and turmeric.
- Temper with cumin in ghee.
- Stir in the finely ground walnut at the end so it stays nutty.
- Serve soft and warm.
