Why am I making this?
Beetroot brings folate and dates bring iron, and a finishing squeeze of citrus (vitamin C) lifts how much of that iron the body actually absorbs. The natural ruby colour and sweetness (madhura) make it irresistible (ruchi) — iron a child reaches for rather than resists. Beetroot is a later arrival to Indian kitchens, placed honestly within the satmya principle; the iron-and-folate case is pure modern nutrition.

- 2 soft dates, deseeded
- A little milk or water to blend
- A squeeze of orange or lemon to finish
- Blend the cooked beetroot and dates with a little milk or water until smooth.
