Why am I making this?

Moong dal (mudga) is one of the most easily digested pulses and beetroot adds folate, iron and a gorgeous pink (ruchi); cooked soft with rice and a little ghee it's a complete, gentle one-pot, and a squeeze of lemon helps the iron absorb. The bright colour does the persuading. Moong is classical; beetroot sits within the satmya principle.

How to make it

What you'll need

  • 1/4 cup moong dal and 1/4 cup rice
  • 1/2 small beetroot, grated, plus carrot and peas
  • Ghee, cumin, a squeeze of lemon
  1. Pressure-cook the moong dal, rice, grated beetroot and vegetables soft with a little turmeric.
  2. Temper with cumin in ghee and stir through.
  3. Mash to the right softness and finish with a squeeze of lemon.
  4. Serve warm.
