Coconut-milk vegetable rice — a soft, calorie-rich dinner for healthy weight gain (2–5 years)

Coconut-milk vegetable rice — a soft, fragrant dinner that slips in extra calories without a fight.

Why am I making this?

Coconut is one of the richest plant sources of fat, which is why a splash of coconut milk turns ordinary vegetable rice into a dense, satisfying dinner — without changing a dish your child already knows and accepts. The fragrance from the tempering makes it appealing, and the soft, creamy texture is easy at the end of a tiring day. It's an easy way to add calories to a savoury meal, not just sweets.

Ancient text

Coconut is a nourishing, strength-giving food, and rice a wholesome staple.

The classical texts note coconut (narikela) as a nourishing, strength-giving and cooling food, and rice among the wholesome staples. A rice dish enriched with coconut reflects that traditional pairing of a gentle staple with a nourishing, fatty fruit.

Modern research

Coconut milk is rich in fat, so adding it to rice meaningfully raises the meal's energy density — a savoury way to add calories without relying on sweet foods.

How to make it

What you'll need

  • 3 tbsp rice
  • 1/3 cup thin coconut milk (fresh or unsweetened tinned, diluted)
  • 3 tbsp finely chopped soft vegetables (carrot, beans, peas)
  • 1 tsp ghee or a little coconut oil
  • A pinch of cumin, a small piece of cinnamon and one clove (removed before serving), a few curry leaves
  1. In the ghee, gently temper cumin, cinnamon, clove and curry leaves, then add the chopped vegetables and saute 2 minutes.
  2. Add the rinsed rice and 1/2 cup water and cook until almost done.
  3. Pour in the thin coconut milk and simmer on low until the rice is soft and creamy and has absorbed the coconut milk.
  4. Remove the whole spices, mash lightly to your child's texture, cool to warm and serve.

What every mother asks

Is coconut milk too heavy for a child?
Used thin and in a modest amount it's gentle and traditional across coastal India; start small if it's new.
My child picks out the vegetables — what then?
Grate or finely chop them so they cook into the rice and disappear; the coconut and tempering carry the flavour.
Tinned or fresh coconut milk?
Either — use fresh if you can, or unsweetened tinned diluted with water; avoid sweetened versions.

A few honest notes

  • Always remove whole spices (clove, cinnamon, curry leaves) before serving.
  • Introduce coconut on its own first if new, to watch for any reaction.
  • Mash to a safe texture for your child's age and supervise eating.
  • A savoury weight-gain dinner used alongside your paediatrician's growth advice, not in place of it.

Storage & make-ahead

Keeps refrigerated for up to a day in a covered container. Reheat gently with a splash of water or coconut milk to loosen, and re-check the temperature. Coconut-based dishes are best not frozen.
