How to make it

What you'll need

  • 3 tbsp whole urad dal (black gram), soaked overnight
  • 1 tbsp rajma (kidney beans), soaked overnight
  • 1 small tomato, pureed
  • 1 tbsp fresh malai or 2 tbsp milk, 1.5 tsp ghee or a little butter
  • Cumin, a tiny pinch of grated ginger and garlic, a pinch of turmeric, a whisper of mild garam masala, salt to taste
  • Soft-cooked rice, to serve

How to make it

  1. Pressure-cook the soaked urad and rajma with turmeric and water until completely soft (they must be very tender); mash lightly.
  2. In ghee, temper cumin, the whisper of ginger-garlic and tomato puree; cook until it thickens.
  3. Add the cooked dal, a little water, salt and a whisper of garam masala; simmer gently 10 minutes so it turns silky.
  4. Stir in the malai or milk off the heat for that mild, creamy makhani finish; serve warm over soft rice.
