Why am I making this?
Spinach (palak) brings leafy iron and folate and dal adds protein and more iron, with a finishing squeeze of lemon (vitamin C) to lift absorption and a little ghee (sneha) for taste and fat-soluble vitamins; a soft, comforting bowl that does real iron work. Blending the spinach into the dal is the chef's step that gets the green past a fussy eye. Spinach and dal are classical.

How to make it
What you'll need
- 1/3 cup moong or toor dal
- A big handful of chopped spinach
- Garlic, turmeric, a little ghee, a squeeze of lemon, rice to serve
- Cook the dal soft with turmeric.
- Add the spinach and simmer just until soft and bright.
- Finish with a mild garlic-ghee tempering and a squeeze of lemon.
- Serve over soft rice.
