Why am I making this?

Spinach (palak) brings leafy iron and folate and dal adds protein and more iron, with a finishing squeeze of lemon (vitamin C) to lift absorption and a little ghee (sneha) for taste and fat-soluble vitamins; a soft, comforting bowl that does real iron work. Blending the spinach into the dal is the chef's step that gets the green past a fussy eye. Spinach and dal are classical.

How to make it

What you'll need

  • 1/3 cup moong or toor dal
  • A big handful of chopped spinach
  • Garlic, turmeric, a little ghee, a squeeze of lemon, rice to serve
  1. Cook the dal soft with turmeric.
  2. Add the spinach and simmer just until soft and bright.
  3. Finish with a mild garlic-ghee tempering and a squeeze of lemon.
  4. Serve over soft rice.
