Why am I making this?
Ragi is the most calcium-rich common cereal, and shaping it into round, dippable appe dotted with hidden vegetables turns nutrition into play (ruchi) — children eat with their hands and their eyes. A roasted sesame chutney doubles the calcium and adds a nutty pull. Soft within, lightly golden outside, it's a fun, genuinely loved bone-building dinner that doesn't feel like 'good for you'.

How to make it
What you'll need
- 4 tbsp ragi flour with 2 tbsp rice flour and 2 tbsp curd
- 2 tbsp finely grated vegetables (carrot, capsicum)
- For the chutney: 1 tbsp roasted sesame, a little coconut
- 1 tsp ghee for the appe pan
- Mix a soft batter with ragi, rice flour, curd, grated vegetables and a little water; rest 10 minutes.
- Pour into a greased appe pan and cook until golden and soft within.
- Blend the sesame and coconut to a smooth chutney.
- Serve the warm appe with the sesame chutney to dip.
