Why am I making this?

Ragi (the most calcium-rich common cereal) made into soft vegetable rotis and served with curd (dadhi) creates a double-calcium plate for bones, with grated vegetables for colour and fibre. Adding a little wheat is the chef's step that keeps a ragi roti soft and pliable rather than crumbly. Ragi and curd are classical.

How to make it

What you'll need

  • 1/2 cup ragi flour and 2 tbsp whole-wheat flour
  • Grated carrot and a little chopped methi or coriander
  • A little ghee, and curd to serve
  1. Knead the ragi, wheat flour and grated vegetables into a soft dough.
  2. Roll thin and cook soft rotis on a tawa with a little ghee.
  3. Keep them soft and pliable.
  4. Serve warm with cool curd.
