How to make it
What you'll need
- 1/3 cup sweet corn kernels
- 1/4 cup finely chopped soft veg (carrot, beans)
- 1 tsp ghee, a pinch of cumin, salt to taste
- 2-3 tbsp milk or a little cream, to finish
- 1/2 tsp cornflour mixed in water, to thicken (optional)
- In the ghee, soften the cumin, corn and vegetables for 2 minutes, then add 1 cup water and simmer until very soft.
- Blend most of it smooth (leave a few whole corn kernels for fun), then return to the pan.
- Season mildly, stir in the milk/cream and the cornflour slurry, and simmer to a soft, creamy soup.
- Cool to warm and serve, with a few soft bread fingers if you like.
