Why am I making this?
Sesame (til) is one of the richest plant calcium sources, toasted and ground over a soft vegetable rice it adds a nutty depth and real calcium for bones, with a little ghee and colourful vegetables. Toasting and grinding the sesame is the chef's step for flavour and absorption — whole sesame mostly passes through. Til is classical.

How to make it
What you'll need
- 1/2 cup soft-cooked rice
- Carrot, peas, beans, curry leaves, a little ghee
- 2 tbsp sesame seeds (til), toasted and ground
- Sauté the vegetables soft with a mild curry-leaf tempering.
- Toss through the cooked rice.
- Toast and grind the sesame and fold it through.
- Serve warm and soft.
