Why am I making this?
Walnut is among the richest plant sources of omega-3, the fat a child's brain is built with, and beetroot's folate supports the nervous system while turning the bowl a captivating pink that pulls a child in (ruchi). Cooked creamy in the Indian way with milk and ghee (sneha), it's tender and chef-like. Walnut is an old-world food; beetroot arrived later, so it sits within the satmya principle — a gorgeous, brain-building dinner.

How to make it
What you'll need
- 4 tbsp soft cooked rice
- 2 tbsp boiled beetroot, finely grated, for colour
- 2 walnut halves, soaked and ground to a smooth paste
- 2–3 tbsp milk, 1 tsp ghee and a little grated cheese
- Warm the rice with milk and ghee, stirring to a creamy, risotto-like softness.
- Stir in the grated beetroot for a blush-pink colour.
- Fold in the smooth walnut paste and a little cheese; warm through.
- Serve creamy and lukewarm.
