Why am I making this?

Pearl millet (bajra, a kshudradhanya) is iron-rich and warming, and roasted in ghee with jaggery (which adds more iron) it makes a soft winter ladoo that delivers iron and lasting energy (ruchi). Roasting the flour well until nutty is the chef's step for a digestible, fragrant ladoo — raw besan-like flour never tastes right. Bajra and jaggery are classical.

How to make it

What you'll need

  • 1/2 cup bajra (pearl millet) flour
  • 1/4 cup jaggery, melted
  • 1 tbsp ghee and 2 tbsp ground nuts
  1. Roast the bajra flour in the ghee on a low flame until nutty and fragrant.
  2. Mix in the ground nuts.
  3. Bind with the melted jaggery while warm.
  4. Roll into small soft ladoos and cool.
