Why am I making this?

Gram flour (chanaka) brings protein and iron and beetroot adds folate, iron and a gorgeous pink that does the persuading (ruchi), in a soft savoury cheela finished with lemon to lift the iron; whisking the batter smooth and cooking the cheela soft are the chef's steps. Gram flour is classical; beetroot sits within the satmya principle.

Ancient text

Gram is valued as wholesome and strengthening.

Modern research

Gram flour supplies protein and iron and beetroot adds folate and iron, with vitamin C (lemon) aiding absorption; pulses and iron pairing are recommended for children.
