Rainbow vegetable sambhar with rice — a tangy South-Indian bowl bursting with colour and vitamin C (2–5 years)

Toor dal simmered with a rainbow of soft vegetables and a gentle tang — the classic sambhar, made mild and colourful for little spoons.

Why am I making this?

Sambhar packs a rainbow of vegetables and toor dal into one tangy, protein-rich bowl, and the tamarind (vitamin C) and tomato lift both flavour and iron absorption; mild-spiced and soft over rice it brings colour, taste and immunity together. Keeping the spice gentle and the vegetables soft is the chef's step for little ones. Tamarind is classical (amlika); tomato sits within the satmya principle.

Ancient text

Pulses, many vegetables and tamarind are valued as wholesome and appetising.

The classical texts value pulses, mixed vegetables (shaaka) and tamarind (amlika) as wholesome and appetising; a vegetable sambhar follows that, with tomato within the satmya principle. The exact verse is being confirmed by our review panel before publication.

Modern research

Mixed vegetables with dal supply vitamins, fibre and protein and tamarind (vitamin C) aids iron absorption; varied vegetables and pulses are recommended for children.
