Why am I making this?
A pesarattu is a whole green-gram (mudga) dosa, naturally high in protein, and a touch of ginger (ardraka) adds warmth that supports digestion and immunity; grinding the soaked moong to a smooth batter and spreading it thin is the chef's step for a soft, even dosa. Green gram and ginger are both classical.

How to make it
What you'll need
- 1/2 cup whole green moong, soaked and ground to a batter
- A little grated ginger, green chilli (optional/omit for little ones), coriander
- A little ghee to cook
- Soak the moong, then grind to a smooth pourable batter with ginger and coriander.
- Spread thin on a warm tawa like a dosa.
- Cook soft with a little ghee until set.
- Serve warm, folded, mild.
