Why am I making this?
One small pinni (~15 g) is a concentrated iron delivery system. Whole-wheat aata carries iron and B-vitamins, and slow-roasting it in ghee darkens the flour, breaks down anti-nutrients like phytates, and improves how the iron absorbs. Jaggery adds another 1 mg of iron per tablespoon plus small calcium. Crushed almonds contribute protein, healthy fats, and gentle zinc. A fingertip pinch of dry-ginger (shunthi) warms digestion — the classical understanding that iron-rich, warm-oily preparations sit best when digestion is supported. Because pinni keeps for two weeks in a jar and can be handed to the child directly, iron gets IN without needing an appetite, a meal, or a fight.

The classical texts name ghrita (ghee), godhuma (wheat) and guda (jaggery) among the most nourishing everyday foods, particularly when combined with warming digestives like shunthi (dry ginger). The Punjabi pinni tradition of feeding these to children and postpartum mothers during colder months carries centuries of accumulated observation: when the body needs building, this combination is what a grandmother reaches for. How to make it
Pinni is what a Punjabi grandmother sends home with anyone she loves — whole-wheat aata slow-roasted in ghee until nut-brown, folded with jaggery and coarsely crushed almonds, rolled into small balls while warm. Denser than a laddoo, warm-tasting, keeping for weeks in a steel dabba. One small pinni a day carries as much iron as a proper meal, in a form a child treats as a treat.

A few honest notes
- Whole almonds are a choking risk under 3 — crush to fine bits for this recipe at this age.
- Do not pair pinni with a glass of milk in the same sitting; dairy calcium reduces iron absorption. Wait an hour either side.
- First time offering almonds: introduce alone in tiny amount, wait 3 days for reaction, then combine.
- Roast the ghee-and-aata mixture slowly on low flame until dark golden — hasty high-flame roasting burns the aata and turns pinni bitter.
- For confirmed iron deficiency, pinni is a supplement to the paediatrician's plan, not a replacement for prescribed iron therapy.
- Dry-ginger (shunthi) is warming — use fingertip-pinch only; excess causes tummy heat in small children.
Storage & make-ahead
Store in a clean, dry steel or glass airtight jar at room temperature. Keeps 2–3 weeks in cool weather, 10 days in warm/humid conditions. Do not refrigerate — the ghee hardens and the pinni becomes difficult to bite. If they harden, warm in a small pan on very low heat for 30 seconds before offering.
