Why am I making this?
Sattu (roasted gram, chanaka) is a traditional powerhouse of iron and protein, seasoned and stuffed into a soft wheat paratha for a filling, savoury breakfast; a squeeze of lemon in the filling lifts the iron absorption — the chef's step. Roasted gram and wheat are classical.

How to make it
What you'll need
- 1 cup whole-wheat flour
- 1/3 cup sattu (roasted gram flour) with grated onion, coriander, a little grated carrot
- A little ghee, mild seasoning, a squeeze of lemon in the filling
- Season the sattu with the grated vegetables, coriander, a little lemon and mild spice.
- Stuff into soft wheat dough and roll gently into parathas.
- Cook soft on a tawa with a little ghee.
- Cut small and serve warm.
