Why am I making this?
Spinach (palak) brings leafy iron and folate and gram flour (besan/chanaka) adds iron and protein, and steaming rather than frying keeps these muthia light and soft; a gentle sesame tempering and a squeeze of lemon (vitamin C) lift both flavour and iron absorption. Steaming then slicing and lightly tempering is the chef's step that keeps them tender. Spinach and gram are classical.

How to make it
What you'll need
- 1 cup chopped spinach
- 1/2 cup besan (gram flour) and 2 tbsp whole-wheat flour
- For tempering: 1 tsp sesame, a few curry leaves, a little oil; a squeeze of lemon
- Mix the spinach, besan and wheat flour with a little water into a soft dough.
- Shape into logs and steam until set, then cool and slice.
- Temper lightly with sesame and curry leaves in minimal oil.
- Finish with a squeeze of lemon and serve soft.
