Why am I making this?
Sprouting green gram (mudga) raises its vitamin C and makes its iron more available, and tossed through soft vegetable rice with a squeeze of lemon it's a light, gentle iron-and-protein bowl. Cooking the sprouts soft (never raw for toddlers) is the chef's safety step. Mudga is classical, and sprouting is an old, valued way to make pulses lighter.

- 1/2 cup sprouted moong
- 1/2 cup soft-cooked rice
- Carrot, peas, a mild tempering, a squeeze of lemon
- Cook the sprouted moong soft (never serve raw to little ones).
- Sauté the vegetables soft with a mild tempering.
- Toss through the rice and soft sprouts.
- Finish with a squeeze of lemon.
