Why am I making this?
Bell peppers are among the richest vitamin-C vegetables and turmeric (haridra) adds its golden, protective warmth, with sweet corn and peas making a colourful one-pot a child eats with their eyes first (ruchi). Adding the peppers towards the end is the chef's step that keeps them bright and their vitamin C intact. Peppers and corn are New World, within the satmya principle; rice, turmeric and ghee are classical.

How to make it
What you'll need
- 1/2 cup soft-cooked rice
- Red, yellow and green capsicum, sweet corn, peas and carrot
- Turmeric, a little ghee, mild whole spice
- Sauté the vegetables soft in a little ghee with turmeric and mild whole spice.
- Fold in the cooked rice gently so it stays fluffy and golden.
- Add the peppers towards the end to keep them bright.
- Serve soft and warm.
