Why am I making this?
Carrot is rich in beta-carotene (vitamin A) central to immunity and healthy eyes, and coconut (narikela) and dates bind it into a soft no-sugar ladoo — a gajar-halwa idea reborn as a clean treat (ruchi). Cooking the carrot down in a little ghee is the chef's step: it concentrates the sweetness and helps the fat-soluble vitamin A absorb. Carrot sits within satmya; coconut and dates are classical.

How to make it
What you'll need
- 1 cup grated carrot
- 1/4 cup grated coconut
- 4–5 soft dates (paste) and 1 tsp ghee, a pinch of cardamom
- Cook the grated carrot in the ghee until soft and the moisture dries off.
- Mix in the coconut, date paste and cardamom and cook briefly to bind.
- Cool slightly and roll into small ladoos.
- Chill to firm up.
